As our Castle Rock community continues to grow, we now have a new restaurant and marketplace to be excited about.
Block and Bottle just recently opened in the south corner of the Encore building in downtown Castle Rock at 20 Wilcox Street. Next door B’s Craft Deli & Market will be opening soon, as well. Both Block and Bottle and B’s Craft Deli & Market are owned by a local chef and entrepreneur, John Johnson, who started in the restaurant business at the age of 13 as a dishwasher. John had a vision for Block and Bottle and B’s Craft Deli & Market for a while and is excited to see them now come to fruition. John is also the owner of Z’Abbracci’s Pizza, Pasta and Tap House (also located in downtown Castle Rock) at 312 Wilcox Street and hopes to expand this business to the Parker and/or Littleton area in the near future. John also has several other unique restaurant ideas in mind which he hopes to realize in the near future in and around the Castle Rock area.
Block and Bottle is a polished
casual place, as John describes
it, with a warm yet industrial vibe.
When you walk in you are greeted
by an open and airy seating area
with a beautiful artistic wood
block wall coupled with exposed
ductwork and pendant lighting.
A covered outdoor seating area
is also available where you can
dine and enjoy the beautiful Colorado weather. Just inside the entrance is a full service bar where you can sit and try one of the many specialty drinks, wines and beers that are offered. John describes Block and Bottle as elevated comfort food with a relaxed atmosphere. Every dish on the menu was created from scratch using John’s years in the restaurant business coupled with the help of some other chefs. The menu consists of starters, soups, salads, sandwiches, burgers, entrees and desserts. Some of the unique appetizers include smoked salmon pastrami crostini, tempura-fried smoked shiitake mushrooms, and mussels and chorizo. One of the well-known items under the sandwich portion of the menu is their Colorado Hot Chicken consisting of a tender fried chicken breast tossed in spicy Nashville hot

sauce, including Mike’s hot honey, with hatch chili spread on a toasted challah bun topped with lettuce, tomato, and pickles. A few entrees offered include Southern Pot Roast, Bone-In Pork Milanese and Braised Beef Gnocchi. There also is a kid’s menu available. Currently
Block and Bottle is open for lunch and dinner. However, John plans to offer a Saturday and Sunday brunch starting in
mid September.
B’s Craft Deli & Market will open soon, and in two stages. This initial phase consists of items such as hot and cold specialty sandwiches, salads, charcuterie boards
and bottles of wine all of which you can order to go or sit and enjoy at the deli. Then shortly after opening the deli and market will be up and running where customers will be able to purchase cured meats, gourmet and specialty cheeses, and prepared dishes and sides which will evolve and change over time. The market will also offer a daily selection of raw beef, pork, and chicken as well as sh and seafood that you will be able to purchase and take home to prepare as you like.
