Ginger Gems
USING ‘K’ BEATER Sift flour, salt, baking powder,
’Spicy and nice’ bicarbonate of soda and spices into the
8 oz self-raising flour bowl add sugar and butter, and rub in on
1 tsp baking powder minimum speed increasing to 2. Stop
½ tsp bicarbonate of soda and add treacle and egg. Switch to
2 oz butter minimum speed, add the coffee and mix
1 egg until well combined (approximately 30
¼ pt strong black coffee seconds).
(warm) Fill greased patty tins about two-thirds
4 oz sugar full of the mixture and bake in a
2 tbsp treacle moderately hot oven (375ºF)
1 tsp powdered ginger approximately 20 minutes.
½ tsp each of cinnamon, Cool on a wire rack.
mixed spice and salt These are nice plain, but even better
with spiced cream.
With a sharp knife make a diagonal split
from the top, ease open and put in a
blob of thick cream – either fresh or
mock (page 88) which has been
whipped with a little sugar and powdered
cinnamon.
Rock Cakes
USING ‘K’ BEATER Cut butter into rough pieces, place in
12 oz plain flour bowl, and switch to minimum speed.
¼ tsp salt Tip in sifted flour, salt, baking powder
2 tsp baking powder and spices. When the mixture resembles
¼ tsp nutmeg coarse breadcrumbs, add the sugar and
¼ tsp mixed spice fruit, and blend thoroughly.
6 oz butter Add the egg, and enough milk to form a
6 oz sugar stiff dough, and switch off.
3 oz currants Shape into small, rocky lumps with a
1½ oz chopped peel couple of forks, on a greased baking
1 egg tray.
milk to bind Bake in a hot oven (450ºF) for
approximately 15 minutes.
