brewing to an East Haven Brewing collective, allowing them to expand production, collaborate with other craft brewers, and develop an incredible variety of beers and ales. They also package their beer in cans for sale at the brewery.
Center Street Brewing Company is the newest and largest of our breweries. Founder Peter Ford had been a brewer for 30 years, has a degree in chemistry, and learned commercial brewing at the American Brewers Guild in Vermont. Peter likes to brew his ales and porters true to style, but with a personal interpretation, or twist. For example, his ESB (extra special bitter), a popular Eng- lish style ale, includes brown sugar to supplement the
natural character of the grains.
Peter’s strong chemistry background qualifies him
to judge Wallingford water as excellent quality for brew- ing. Water is one of the most important ingredients and would require expensive conditioning if it were inferior. He also tries to use local ingredients where possible. Hops and malted barley are sourced from Windsor’s Thrall Family Malt and DeFrancesco Farm in Northford when available.
Peter says he has tried to create a neighborhood atmosphere, and seems to have succeeded. There are several long tables, similar to a German beer hall, where large groups can be comfortable, and patrons can inter- act with one another. Another local twist here is that the microburst that hit the area in May, 2018 left broken trees in Sleeping Giant and Wharton Brook State Parks.

Center Street Brewing is a family affair. Peter’s broth- er, Tim, is his partner. Sons John, Nick and friend Patrick help behind the bar and work on social media opportuni- ties. Wife, Lynn picks up any slack that might be left.
Peter says many of his customers live close enough to walk to the brewery. For others, there is plenty of park-
