Culinary director of Brisbane’s Howard Smith Wharves named
Ahead of its grand opening later in the year, Howard Smith Wharves has named hospitality veteran David Finlayson as its new director of culinary.
Located below the Story Bridge and built in the 1930s, the heritage-listed wharves were designed by the Queensland Government as a means to provide locals with relief work during the depression. The structure was abandoned in the 1960s and has remained deserted until recently.
The Howard Smith Wharves' rejuvenation is part of a bigger project to overhaul of Brisbane’s tourism, dining and lifestyle industries, and as a dining and entertainment precinct the wharves will include a 164 room, 5-star boutique hotel, function spaces, a craft brewery, and various bars and restaurants.
As the director of culinary, Scottish-born Finlayson will
oversee the food and beverage offerings at Felons Brewing Co., the Overwater Bar, Howard’s Hall and Rivershed events, and a yet-to-be-named restaurant and wine bar.
Finlayson joins Howard Smith Wharves following a six-year stint with The Lucas Group. He has also worked for the award-winning Tapas Bars (Hong Kong) and two Michelin star Pied à Terre (London).
“I have been very lucky with this industry and it has given me a lot through my hard work and dedication across 23 years,” says Finlayson. “I am hoping
to give back and set up the industry for the future.”
