MARBLE NG’S FRIED RICE
SERVES 2
2 cups jasmine rice, steamed 1 tbsp cooking oil
60 g wagyu beef, cubed
40 g asparagus, finely chopped 40 g baby corn, finely chopped 10 g shallot, finely chopped 1egg
1 tsp XO sauce
10 g coriander, finely chopped
M E T H O D Heat a large wok on high heat and add the cooking oil. Pan fry the wagyu beef until half cooked. Set aside until needed.
In the same wok, add the chopped asparagus, baby corn and shallot. Allow to half cook before setting aside until needed.
Crack the egg into the wok, and cook through. Add the vegetables, wagyu beef and XO sauce, and toss until cooked well. Garnish with chopped coriander.
