Ingredion has unveiled a new plating agent, a high-capacity carrier that turns oil- and water-soluble liquids into powdered ingredients.
Ingredion’s N-ZORBIT 2144, which is being released in the Asia Pacific region, can unlock new application opportunities for manufacturers by enabling the creation of powdered versions of oil and water-based flavours and seasonings the company says.
It also adds thick honey, chocolate syrup and other viscous fluids to the range of ingredients that can be made into powders without the added expense of spray drying.
The ingredient has a unique, porous structure
that increases
the surface
area exposed to liquids, facilitating absorption.
Due to the non-
gelatinised
and unique
granular
structure of the
ingredient, it can be used to carry high-flavour concentrations that flow freely through processing equipment and mix evenly into food and beverage recipes.
The plating agent contributes to an optimal particle size that can deliver a plating capacity as high as 40 percent. This means 100 grams of N-ZORBIT 2144 can plate up to 70 grams of liquid, far more than traditional carriers such as maltodextrin.
“Creating today’s on-trend foods and beverages means using a wide assortment of spices, seasonings, flavours and actives,” Ingredion’s director of global business development Donna Brooks says.

CSR has developed a new range of icing mixes that seek to address parental concerns over the use of artificial ingredients.
CSR Sugar will roll out a new range of natural buttercream icing mixes in August that uses a range of plant-based colours and flavours.
The All Natural Buttercream Icing Mix is made with no added colours, artificial flavours, gluten or preservatives, in chocolate, vanilla, and strawberry flavours.
The chocolate variety is made with Dutch-processed cocoa; the vanilla uses sweet corn
to create the most natural and easy-to-use icing without losing any of the delicious flavours. The new All Natural Buttercream Icing Mix range not only use natural ingredients but are also easy to use, making them the perfect addition to any baking.”

powder; and the strawberry version uses beetroot powder.
The mixes require only butter and water.
Marketing manager Melissa Clayton says the product offers consumers convenience in home baking, as well as natural ingredients.

The mixes have been made to ice a 20-23cm cake, 12 cupcakes or 24 mini-cupcakes, and will be sold in Coles, Woolworths and independent retailers at a RRP of $2.99. ✷
