For the last six months we’ve been trawling the country for the best burger of 2019 and, out of over 150 applicants and lots of interstate deliberation, we found one chef in Melbourne who’s flipping something special. Keep turning those pages to find out where. Jill Dupleix, on the other hand, travelled to Singapore and put the Impossible Foods meatless bleeding burger to the test. Did it live up to the hype? But we didn’t just have burgers on the brain this month; we went beyond one dish and spoke to Aussie chefs who are approaching entire cuisines with fresh eyes – like Junda Khoo and William Xie’s Malaysian street food at Sydney’s Ho Jiak, and Nick Stanton’s New York, Australian and Italian menu at Leonardo’s Pizza Palace in Melbourne.
