1 Small or 1.5lbs/700g Red Cabbage, shredded
1 Turnip 4oz/100g, chopped
2 Medium Green Apples, cored and chopped, skins on
3 Celery s cks,  nely chopped One inch Ginger,  nely chopped 2 Tablespoons Cooking Oil Moroccan Spice Mix:
1 Teaspoon each of Cinnamon, Ginger, Coriander seeds, Five spice powder, and Turmeric powder, (blend together in a co ee maker)
1 Medium Sweet Potato or 8oz/225g chopped
2 Vegetable Stock Cubes

Red Cabbage & Apple Soup
Directions
Fry the celery and ginger together with the fresh ground Moroccan spice, s r for two minutes. Add the cabbage, turnip, apple, sweet potato, vegetable stock cubes and water.
Bring to the boil and turn o  the heat. Leave to cook in its own heat for 20 mins.
Blend with a handheld blender, correct the seasoning, and serve.
