     SAM’S FRUIT CAKE
Ingredients :
900ml Chocolate or Coffee flavoured milk
[ready mixed bottle from supermarket]
1 1⁄2 kg mixed fruit - or just sultanas if preferred 3 cups self raising flour
1⁄4 cup Rum - optional
Method :
Soak fruit in the milk in the fridge for 24 hours
Mix in the dry ingredients and Rum if using
Divide between 2 x 7” [18cm] cake tins
[or one larger tin if preferred] lined with baking paper Bake for approx 2 hours at 160˚c
[test with a thin metal skewer – if comes out clean, it’s done!
Allow to cool on wire rack and store in air-tight tin or container.
Just 3 main ingredients and no eggs! Amazing! Lovely moist cake... and so easy to make!!!
