                                                                                                                        Tender sprouts safeguard bladder
                                                                                                  Cruciferous vegetables like broccoli, cabbage, and kale pack lots of cancer-crushing compounds,
                                                                                                  including isothiocyanates (ITCs). Thanks to them, something as simple as munching on raw veggies
                                                                                                  can protect you from bladder cancer.
                                                                                                  Out of 1,400 people, those who ate the most isothiocyanates in their diets were 29 percent less
                                                                                                  likely to get bladder cancer, with seniors and smokers getting the most protection. Animal studies
                                                                                                  might have solved the mystery.
                                                                                                  Broccoli sprouts are jam-packed with ITCs. In one study, the more rats ate, the less likely they
                                                                                                  were to get bladder cancer, and the slower the cancer progressed. Scientists discovered that
                                                                                                  ITCs boosted enzymes that protect cells from oxidation, a process that contributes to cancer.
                                                                                                  The kidneys process Super cruciferous vegetables these protective compounds and eventually
                                                                                                  flush them into your bladder, where they sit until you go to the bathroom. This means ITCs spend
                                                                                                  a lot of time in close contact with the bladder lining, where cancer is most likely to develop.

                                                                                                  Cooked and raw crucifers don’t offer the same protection, though. In another study only raw
                                                                                                  veggies seemed to lower the risk of this disease, and people needed to eat three or more servings
                                                                                                  each month to gain protection.  Cooking can destroy isothiocyanates in cruciferous vegetables
                                                                                                  like cauliflower. So break out the raw veggie tray for your visitors, whip up fresh cole slaw, and
                                                                                                  munch on fresh broccoli when you need a quick snack.
