Garden Checklist: Removing mistletoe the right way
Carrot Cake Gooey Butter Cookies

2 1⁄4 cups plus one tbsp flour 3 1⁄2 tsp baking powder
1 1⁄2 tsp ground cinnamon
1⁄4 tsp ground allspice
1⁄4 tsp ground ginger
1⁄4 tsp freshly grated whole nutmeg
1 (8oz) package cream cheese
1⁄2 cup (1stick) soften unsalted butter
3⁄4 cup firmly packed dark brown sugar 1 tbsp pure vanilla extract
1 tsp kosher salt or 3⁄4 tsp table salt
1 large egg plus 1 large egg yolk
1 1⁄4 cups finely grated carrots, about 3-4 medium
6 tbsp unsweetened coconut
1 cup confectioners sugar for rolling and dusting cookies.
In a medium bowl, whisk together flour, baking powder and spices until well blended. Set aside. Using an electric mixer, cream to- gether cream cheese and butter until well blended. Beat in sugars, vanilla and salt; mix until well combined and light and fluffy, add egg and egg yolk and beat in well until creamy and light, about 1 to 2 minutes on medium speed. On low speed, gradually add flour mixture and mix until few flour streaks remain. Fold in carrots and coconut until thor- oughly incorporated. Do not over mix. Dough will be very sticky. Cover work bowl and re- frigerate at least 2 hours or overnight.
Meanwhile, arrange oven rack in lower third of oven and preheat oven to 325oF. Line two baking sheets with parchment paper; set aside. Place con- fectioners’ sugar in a small bowl; set aside.
Measure enough dough to roll into generous 1-inch balls, using a 1 1/3-inch spring-loaded cookie scoop (or by measuring a generous tablespoon of dough with a measuring spoon) making sure each scoopful is in equal amounts. This is important for evenly baked cookies.
Roll dough between palms of hands to achieve a small rounded ball and then roll in confectioners’ sugar to lightly coat. Place dough balls on prepared baking sheets at least 2 inches apart.
Bake in preheated oven until cookies have spread into round cookie shapes and are puffed and crack- ly,about14minutes. Donotoverbake.Thecookies will still be soft in the centers.

The Garden Check- list is filled with tips and tricks for local gar- deners who wish to keep their greenery, flowers and herbs looking beau- tiful all year long.
A devoted gardener would rather give or re- ceive tools, plants or a unique garden treasure than gold, diamonds or pearls.
Tasks for this time of year, remember to re- move fallen camellia blossoms promptly to prevent petal blight on next year’s flowers.
Mistletoe is very difficult to control be- cause reinfestation
occurs from nearby infected trees. An in- fected branch must be removed at its points of origin and at least 1 foot below the cluster.
When pruning, wait to prune spring flow- ering plants until af- ter bloom — deciduous magnolias, spiraea, aza- leas and camellias.
Also, do not apply any treatments to prun- ing cuts or other wounds because these materials are ineffective and often are detrimental.
No fertilization is recommended this month.
Planting, bare root plants now, while they
are dormant. They will have the full advantage of the spring growing season and will be well established during the coming year.
Bulbs, corms, tubers: cyclamen, dahlia.
Fruits and vegeta- bles: bare root cane ber- ries, garlic, leek
Enjoy annuals and perennials: dianthus, poinsettia (Euphorbia pulcherrima), toadflax (Linaria maroccana), stock (Matthiola) now.
As well as bulbs, corms, tubers: snowdrop (Galanthus), narcissus.
Trees, shrubs, vines: camellia, Hawthorne (Crataegus).
Fruits and vegeta- bles: avocado, grape- fruit, kumquat, pome- granates. Things to ponder: Look through garden books for ideas using drought tolerant or water-wise plants.
Avoid overhead wa- tering if frost is ex- pected. Chocolate Toffee Pecan William Figueroa - First Place
1⁄2 cup butter
3⁄4 cup sugar
3⁄4 cup brown sugar
2 eggs
1 tsp vanilla
2 1⁄2 cups flour
1 tsp baking soda
2 cups toffee bits
1 cup chopped pecans 2 cups chocolate chips
Directions: Mix butter, sugars, vanilla, add eggs one at a time. Mix until creamy. In an- other bowl, whisk flour and baking soda, add to creamy mixture. Mix well, add toffee bit, pecans, and chocolate chips. Drop by round spoonful. Bake 15 minutes at 350 degrees. Makes 3 dozen cookies.

1 cup shortening
1 cup sugar
1 cup brown sugar 2 eggs
1 tsp vanilla
1 1⁄2 cups flour
1 tsp baking soda 3 cups oats
Topping
2/3 cup sugar
1⁄2 cups butter
2 tbsp corn syrup
3⁄4 cup sliced almonds
Directions: Cream shortening and sugars, add eggs and vanilla. Stir in dry ingredients. For topping, in sauce pan mix sugar, butter, corn syrup and bring to a boil. Remove from heat.
Stir in almonds. Set aside. Drop cookie dough on ungreased sheets or parchment. Bake 350 degrees for 7 minutes. Remove from oven and spoon 1⁄2 tsp topping onto cen- ter of each cookie pressing lightly.
Return to oven and bake 5-6 minutes until lightly brown. Cool slightly before removing from pans.
