How would you best describe the
type of cuisine that you offer? I like
to cook the classics but with my own
twist on it, whether it is using a more
modern technique or a slightly exotic ingredient. A popular dish on our
breakfast menu pairs scrambled egg
with smoked trout instead of the traditional salmon and I also add some watermelon
to garnish to make an otherwise fatty dish refreshing as well as adding another texture to the plate.
What’s the best selling dish on your menu?
Where do you source your ingredients? As locally as possible and
organically when we can. Our coffee is roasted in Wellingborough by Bella Barista, our meat comes from Trendall’s in Oundle, our wine from Amps, not to mention some of our produce is foraged from the surrounding countryside.
