As the end of the season approaches, the garden is abundant with a surplus of homegrown tomatoes, leaving gardeners with an ample supply of fruits. With the bounty of tomatoes in hand, culinary creativity comes to life in the kitchen. From crafting delightful tomato sauces and salsas to simmering hearty soups and stews, the possibilities seem endless.
Roasted Tomato Soup
8 fresh Tomatoes
1 Red Onion
2 Romano pepper
6 large Garlic cloves 750ml Water
5 tbsp of Ricotta Olive Oil
Salt
Pepper
50g Coriander Croutons
Preheat oven to 200°C/fan 180°C/ gas 6.
On a baking tray, place the garlic cloves, pepper, red onions and plum tomatoes, cut lengthwise into halves or thirds. Drizzle it all with a good splash of olive oil and season with salt and pepper.
Roast the vegetables for 45-55 mins or until tender and lightly golden.
On the side, boil the water in a kettle.
Using a hand or a bulled blender, blitz all the vegetables together (including the roasting juices) with the ricotta and coriander, adding enough hot water until achieving
a smooth consistency. Correct seasoning if required.
Serve the soup with croutons and fresh coriander.

Baked Tomato and Feta Pasta

500g Cherry Tomatoes 1 block Feta Cheese
3 small shallots
3 garlic cloves
325g macaroni or cavatappi or fussily pasta
Olive Oil
Salt and Pepper
Thyme Chilli flakes Basil
Preheat oven to 200°C/fan 180°C/gas 6. Place the tomatoes, shallots, garlic cloves
and a good splash of olive oil in a roasting tray. Season well with pepper and thyme. Toss to combine.
Place the feta cheese in the centre of the tomato mixture and season with chilli flakes and olive oil. No need to add salt as the feta cheese is already salty.
Bake for 40 minutes until the tomatoes are bursting.
Cook the pasta according to package instructions.
Remove the baking tray from the
oven and using a hand blender, blitz the tomatoes and the feta together. If a rougher texture is preferred, use a fork or a spoon instead.
Mix the pasta and the tomato paste, stirring until combined. Garnish with basil.
