                     Method
 Cut the vegetables to roughly the same size, coat well with the olive oil and season well with salt and pepper.
 Roast the vegetables for 25-30 minutes Gas 4/180°c, allow to cool.
 Make the pizza dough by following the sub recipe.
 Roll the pizza dough out and cut into circles.
 Divide the vegetables between the pizzas and place just off centre. Fold the dough over the vegetables leaving enough of an edge to fold back over a seal.
 Cook in a hot oven for 15 minutes Gas 4/180°c.
   Tip - use a little water to seal down the edges. This is great served with a tomato salad or some spicy wedges.
