     Method
 In a saucepan gently cook the onions for 5 minutes or until soft, then add the garlic, celery and carrot and cook for a further 5-6 minutes or until softened without colouring.
 Add the tomato purée and cook for a few minutes before adding the chopped tomatoes and herbs.
 Cook on a gentle heat for approximately 30 minutes.
 Finish with the caster sugar at the end to add a little sweetness.
