3. Shared Decentralized Production Kitchens
a-New construction can offer the possibility of shared, decentralized production kitchens. Each neighborhood enjoys a kitchenette, and shares a staff-only serving kitchen with another neighborhood. Simple appliance conversions could convert these serving kitchens to full production kitchens in the future. Dishes can be washed in the neighborhood kitchen, eliminating the need for tray line washing systems in the main kitchen.
b-Positives include the cost savings of a shared serving kitchen and the flexibility to convert to a full production kitchen in the future.
c-Again, sanitation and safety are primary concerns. All staff working in the kitchen should be trained in and follow standard dietary food preparation procedures, wear a hair restraint and a clean uniform.
d-Neilson Place, North Country Health Care in Bemidji, MN opened a new home
in fall, 2004. Each of their four neighborhoods features a full kitchen at the hub of each neighborhood living area. Breakfasts are cooked-to-order. Kitchens are open for resident, family and staff access 24/7. Dishwashers rooms add the sounds and smells of home to the neighborhoods. Staff hopes to cook three meals a day in each neighborhood soon!
