Workforce
Decentralization of production and service can bring the dining experience closer to the residents. The creative use of time studies can identify the labor
hours available for dietary preparation and service functions to move closer to the households. When breakfast, desserts or the occasional special meal is prepared in the neighborhood, closer to the residents, it is a positive experience for all involved.
1) Determine the dietary staffing required to meet the organization’s needs for meal service to all areas of the facility, as well as catering and special function needs.
2) Determine how many dietary staff hours will need to remain in the main kitchen to meet these external needs.
3) Determine the availability of the department director to assume household leadership responsibilities.
4) Determine how many dietary staff (and what positions) will need to remain in the main kitchen (this depends on whether dishwashers
are put in the households, existence of stove tops, and how many meals will come from the main kitchen). Take all other existing dietary hours and divide them per resident into the
neighborhoods or households to bring meal preparation and service closer to the residents.
