Food for Thought
A one day workshop
Whether you are a traditional facility or a transforming facility, whether
you are well along on a culture change journey or just thinking about
beginning the journey, this introduction to the opportunities to enhance the
dining experience will be of value to your food and nutrition services staff; RDs, CDMs, cooks, and chefs, as well as administrators and department leaders in other departments.
In the spirit of OBRA ‘87, challenging us to maximize resident choice and honor resident individuality through dining innovations, this workshop will
explore opportunities from as simple as special celebratory meals to the complexity of breakfast cooked to order in a household kitchen. Learn what pioneers in culture change dining innovations are doing to enhance resident centered dining in long term care.
Dining: the Heart of Home
A four day intensive
For dining services leadership in facilities committed to culture change to enhance resident choice and dignity in dining––dietitians, certified
dietary managers, directors, chefs, administrators, CEOs, department heads in other departments––all will benefit from this intense experience in understanding dining opportunities. Participants will spend two days exploring the opportunities and experiences of facilities that pioneered dining innovations; one day will be spent immersed in a household, exploring first hand breakfast to order, continuous dining, waited table service and dining innovations from the perspective of residents, families and staff.
The final day will be spent reviewing policies and procedures and best
practices in dining innovations to assist you in selecting the best approaches
for your facility and your residents. This workshop will also include a
presentation on culinary arts opportunities in dining at home by an executive chef!
