  Summer In A Salad
1-1/2 cups corn (cut from 2-3 ears or frozen/ thawed)
2 tsp. grapeseed oil (you can use canola, etc.) 2 avocados, peeled and diced
1 pint cherry tomatoes, halved 1/2 cup diced red onion
1 lime, juiced
1/2 tsp. salt
1/4 tsp. pepper
INSTRUCTIONS:
Heat a grill pan over medium-high heat and brush a light layer of oil on the pan. Add the corn to the grill pan and cook for about 10 minutes, until the corn is lightly browned, stir- ring occasionally.
Combine the avocados, tomatoes, toasted corn, and red onion in a large bowl. In a small bowl, mix the lime juice, salt and pepper. Pour over the veggies and stir until combined. Re- frigerate the salad for at least 45 minutes, up to 4 hours. Serve cold.
TO PREPARE THE DAY OR NIGHT BE- FORE: prepare as instructed above, except do not add the avocados. When ready to serve, add the peeled & diced avocados and stir to combine with the other ingredients. the avo- cados can be added in advance but will start to brown if the salad is left to chill overnight.
Watermelon Pops
Ingredients:
3 cups watermelon puree
(seedless if possible) 1/2 cup fresh blueberries 1/2 cup chopped fresh
strawberries
1 kiwi, peeled and sliced 1 peach or nectarine,
diced small handful fresh cherries,
pitted and chopped
Cut the watermelon into chunks and then puree it in a blender until smooth. Set aside.
Set out about 1 dozen popsicle molds (amount needed will vary depending on size of molds). Fill each one with the chopped fresh fruit. Then pour in the watermelon puree until each mold is full to the top. Place a popsicle stick into each one. Place into your freezer and freeze for about 6 to 8 hours.
Peach Lemonade

4 ripe fresh peaches, sliced 3 lemons, sliced
1 large container raspberry
lemonade
1 bottle sparkling water or
club soda
3 lemons, juiced ice
INSTRUCTIONS
1. Add the peach and lemon slices into a large pitcher. Using a wood- en spoon, mash the slices as best you can.
2. Pour in the lemonade, sparkling water and lemon juice. Stir and place in the fridge to chill. Stir in ice right before serving.
