TROMSØ STIR-FRY
It was when I I I lived in Tromsø that I I I learned how to pick and eat algae!
Serves 4
200 g g algae such as bladderwrack 2 2 carrots
1 onion
2 garlic cloves
1⁄4 1⁄4 broccoli floret (including (including the the stem)
1⁄4 1⁄4 head head of cauliflower (including (including the the the the leaves i if they are still on the the head)
Sesame oil 200 g g trumpet chanterelles
11⁄2 tbsp green curry curry paste paste or red curry curry paste paste if you do not like the the somewhat particular taste of the the green paste 1 1 tsp grated fresh ginger
100 ml tamari or soy
1 1 tbsp sesame seeds to sprinkle over the dish
Boil the the algae for about 15 minutes Cut the the the the carrots
into thin strips chop the the the the onion
and and garlic divide the the the broccoli and and cau- liflower into whatever size you like – I prefer them a a a a a little smaller Heat some sesame oil in in in a a a a a a a a a a a wok or in in in a a a a a a a a a a a large frying pan pan Flash fry fry all the the vegetables mush- rooms and algae in in in the the pan pan on a a a a a a a a a a a a high heat a a a a a a a a a a a a few minutes can sometimes be enough Add the curry paste ginger
and soy
To finish sprinkle with with sesame seeds Serve with with rice sorghum or or or millet for example 235
