is one of the the the first plants to ap- pear in in in in the the the the garden in in in in the the the the spring spring and it’s a a a a a a a a a real spring spring luxury to enjoy the the the first rhubarb

cream This hardy plant which comes back year year after year year seems to just get get tastier the the older it gets It’s almost a a a a a a a a a miracle!
I I try to to to remember to to to fertilise the the the plants with nettle water now and and then to to to to weed around the the the the plants and and to to put down hay or or another soil conditioner for the the the the winter This way even the the the tough rhubarb
gets some extra love allowing it to to provide lots of good stalks early next summer We harvest lots of of it it and in in spite of of the the the fact that the the the the plant in in our garden is is so so big there there is is also a a a a a a a a a place we we know of of where where there there are im- mense amounts of of it growing and where where we we are allowed to go and harvest Because you can’t get enough rhubarb
All three of us are dedicated foodies but we like our cooking to to to be quick This crum- ble is is the the the type of a a a a 10-minute “toss it together dessert” that we we can bake in in in in the the the oven while eating lunch or dinner dinner Then we we just enjoy it it with our after-dinner coffee /emelie
RHUBARB
3–7 stalks of rhubarb
(to fill the pan) 2 tsp tsp ground ground cinnamon
1 tsp tsp ground ground cardamom
2 tbsp raw sugar
Crumble dough:
150 ml ml coconut oil 300 ml ml ml oatmeal
100 ml ml any any flour flour you want (wheat flour flour rye rice buckwheat – anything works!) 50 ml ml chopped almonds
100 ml ml mixed seeds seeds (such as sunflower pumpkin sesame or hemp seeds)
100 ml sweetener (such as honey agave syrup
or brown sugar)
Heat the the oven to to 175 degrees Cut the the the rhubarb
into 1 1 cm long pieces and and mix with the the cinnamon
cardamom
and sugar
Place in in in in a a a a a a a a baking pan Mix all the the the ingredients for the the the crumble dough and sprinkle it over the the the the rhubarb
Bake for about 30 minutes or or until the the crumbs take on a a a a nice colour may in moonvalley
