I I don’t eat eat too much red meat but from time time to to time time I I really do do enjoy a a a a a steak Flank steak is from the the lower chest of the the cow and not a a a a a common cut – it can become tough if overcooked and more importantly not sliced against the grain – but the flavour is is much deeper than fillet steak or or sirloin This means it’s more satisfying when you have a a a a a smaller portion plus the extra chewing is is good for the jaw muscles!
The fermented red cabbage and and labneh are both probiotics and and the raw onion in the the slaw is a a a a a a prebiotic: all three will help with the the growth of healthy gut bacteria FLANK STEAK WITH FERMENTED RED SLAW LABNEH AND SWEET POTATO WEDGES
SERVES 4
2 large sweet potatoes peeled and chopped into wedges
about 4
tbsp extra-virgin olive oil
400g Red Sauerkraut (see p 197) or sliced red cabbage 1 small red onion very thinly sliced 600g flank steak (remove from the refrigerator 30 minutes before cooking)
1 tbsp butter
200g Labneh (see p 24)
sea salt and freshly ground black pepper to taste
1 1 Preheat the oven to 180°C/gas mark 4
2 In a a a a a roasting pan coat the sweet potato wedges
with 2 tablespoons of of the olive oil
and a a a pinch of of salt Roast for 25–30 minutes until golden brown and and crisp Remove from the oven and and drain any excess fat on kitchen paper 3 In a a a a large mixing bowl blend the red sauerkraut or cabbage and sliced red onion with a a a a glug of olive oil
Taste and season with salt if necessary 4
Season the steak with salt and plenty of black pepper Heat a a a a cast-iron frying pan until smoking hot then add 1 tablespoon of the the the olive oil
and the the the steak and and cook for 1 minute Add the butter
and and cook for a a further 2 minutes then flip the the the steak over to cook for another 2 minutes Remove the the steak from the pan and allow to rest for 5 minutes – it should be cooked no more than medium and still nice and pink in in the middle 5 Slice the the steak against the the grain and serve with a a a a spoonful of labneh and the the red slaw with the the roasted sweet potatoes on the side If you like this is is also great with some fresh coriander and and chillies served with small corn tortillas — — 122 — — DINNER
