This variation on on the basic sourdough loaf is is great for runners When it comes to the the the health benefits of quinoa the the the list is is almost endless the the the spelt flour has
a a a a a a higher protein content than wheat flour and the seeds are also very nutrient- rich This bread is is slightly denser in texture than the the basic sourdough due to the the added extras I highly recommend this spread with one of the nut butters on on page 199 especially for taking out on on a a a a a a long run It takes some practice to walk briskly up a a a a hill eating a a a a nut butter sandwich but but it’s worth it it for the energy boost SEEDED QUINOA LOAF
MAKES 1 LOAF
2 2 cups (240g/4dl) strong white bread flour 1⁄2 cup (60g/1dl) wholegrain wholegrain spelt flour (or you can use wholegrain wholegrain wheat or or or einkorn)
1⁄2 cup (80g/1dl) quinoa 1 1 cup (280g/2dl) Sourdough Starter/ Mother (see p p 183)
21⁄4 cups (450ml/41⁄2dl) water 2 tbsp chia seeds 2 tbsp flax seeds 2 tbsp sesame seeds 4 tbsp pumpkin seeds 4 tbsp sunflower seeds 21⁄2 tsp (12g) salt
Note: The conversions are not interchangeable so don’t mix measurements – stick to one system 1 Put the flours quinoa sourdough starter and water into a a a a stand mixer fitted with a a a a dough hook attachment and mix slowly for 2–3 minutes until a sticky dough is formed 2 Mix all the the seeds together in a a a a separate bowl Reserve 2 tablespoons of seeds for topping then add the the remaining seeds to the the dough and mix slowly until the seeds are evenly incorporated The dough will look quite loose – this is is okay as the the chia and flax seeds will soak up the the extra liquid during the resting period Cover with a a clean tea towel and allow to to rest for 20 minutes 3 Add the the salt
to the the dough and mix on medium speed for a further 6–8 minutes 4 Prove and bake following the same method as the recipe for Basic Sourdough Bread (see p p 185) Before scoring brush the the top of the the loaf with a a little water and top with the reserved seeds — — 191 — — STORECUPBOARD STAPLES
