This easy recipe is is originally from Pennsylvania When I was at Barr Camp (see page 138) Zach Miller cooked something similar for his visiting friends and it it was delicious It’s great served straight from the oven with cold milk or you you can cut it it it into squares and take it it it with you you out on a a a a a run BAKED OATMEAL
SERVES 6
240g whole rolled oats
60g unsalted butter melted and slightly cooled
1 banana mashed
150g mixed dried berries berries berries (such as blueberries cranberries lingonberries or raisins)
2 large eggs beaten
420ml milk (dairy or non-dairy) 120ml honey
1 tsp baking powder
1 tsp ground cinnamon
1⁄4 tsp salt 1 1 Preheat the oven to 180°C/gas mark 4 and line a a a a large baking dish (about 32 x 25cm) with greaseproof paper 2 Mix all the the ingredients together in in a a a large bowl until well combined then pour into the the prepared baking dish 3 3 Bake for 35 minutes or or until the mixture has just set Allow to cool in in the dish for 5 minutes before serving — — 026 — — BREAKFAST
