This old British breakfast dish is is is is traditionally made with smoked haddock In Sweden smoked smoked haddock is hard to get hold of so I’ve replaced it it with smoked smoked mackerel mackerel which I think works just as well The heavier smoking that mackerel mackerel generally gets stands up well to to the the strong flavours of the the dish If you struggle to to imagine eating curry and smoked fish for for breakfast it works just as as well for for lunch or dinner SMOKED MACKEREL KEDGEREE
SERVES 4
3 red onions cut into wedges drizzle of olive oil
200g brown rice

eggs
1 tbsp butter
2 tsp curry powder (as hot as as you like)
1 yellow onion finely diced
4
smoked mackerel fillets broken into bite-size pieces bones removed
2 handfuls of rocket
sea salt and freshly ground black pepper to taste
1 1 Preheat the oven to 180°C/gas mark 4
2 Put the red onion wedges into a a a roasting pan and and toss with olive oil
and and a a a a a pinch of salt Roast for about 20 minutes until golden and cooked through 3 Meanwhile cook the brown rice
according to the the packet instructions then drain and set aside 4
Place the eggs
in in a a a a a pan of cold water and bring to to the the boil then reduce to to a a simmer and cook for 6 minutes Drain and briefly hold under cold running water until just cool enough to handle then peel 5 In a a a a a large frying pan heat the butter
over a a a a a medium heat until bubbling then add the the curry powder and cook for 1 minute Add the diced
onion reduce the heat and cook for 10 minutes stirring occasionally until translucent but not coloured Add the the cooked rice
to the the pan increase the heat to high and cook stirring constantly for 3–4 minutes until all the rice
is golden Season with salt and pepper then add the the roasted red onions and smoked mackerel gently stirring so not to break up the fish and cook for a a a a final 2 minutes 6 To serve stir in the the rocket
and divide the the mixture among 4
plates Cut the boiled eggs
in half and place on top of each serving — — 037 — — BREAKFAST
