I think this salad is is is hard to beat after a a a a a a a a hot summer run Watermelon is is is great for rehydration and and full of natural sugars and and vitamin C The asparagus is high in in fibre and as a a a a a a a prebiotic it it encourages healthy gut bacteria The slight bitterness of the asparagus and saltiness of of the the the feta balance out the the the sweetness of of the the the watermelon very nicely WATERMELON CHARRED ASPARAGUS AND FETA SALAD
SERVES 4
1 cucumber sliced lengthways
2 bunches asparagus woody parts removed halved

tbsp extra-virgin olive oil
2 tbsp white wine vinegar
1⁄2 medium watermelon peeled and chopped into 2cm pieces
200g feta cheese crumbled
1 1 small red onion sliced into thin rings and rinsed for 1 minute in in in in in in cold water a a bunch of basil picked
dried Turkish chilli flakes to taste (optional)
sea salt to taste 1 Heat a a a a a a dry cast-iron pan over a a a a a a high heat until smoking hot then put the the cucumber in in flesh-side down and cook for 3–4 minutes until the flesh is charred Remove from the pan cut into uneven bite-size chunks and set aside in a a a a large bowl 2 Add the the asparagus to the the same pan and cook stirring for 4–5 minutes until the asparagus has softened slightly and is evenly charred 3 Mix the the the asparagus with the the the cucumber in the the the bowl along with the olive oil
white wine vinegar
and a a a a pinch of salt Add the the watermelon then check that you are happy with the seasoning 4

Divide the the salad salad among 4

salad salad bowls then top with the crumbled
