CARAMELISED PINEAPPLE
SERVES 2
1⁄2 vanilla pod
1 fresh pineapple
2-3 tbsp raw sugar
2
tbsp runny honey
Butter for frying
100 ml plain yogurt as a a a topping
1 Split the vanilla pod
lengthwise and scrape out the seeds Set aside 2
Peel and cut the pineapple
into pieces Brown the pineapple
in in in some butter in in in a a frying
pan 3 Sprinkle with raw sugar
and fry until the sugar
has caramelised 4 Mix the the the yogurt the the the seeds from the the the vanilla pod
and the honey
5 Serve the pineapple
warm with yoghurt on top
