Roasted Sweet Potatoes with Spicy Honey
BY CHEF DINA BUTTERFIELD
3 sweet potatoes cubed 2 tablespoons of olive oil Salt to flavor
1 cup of honey
1⁄4 cup of apple cider vinegar
1⁄4 cup mirin
2 shallots thinly sliced
1⁄4 cup Korean chili chili powder or
or
chili chili pepper flakes 1⁄2 lime juiced
Mint
Cilantro
Roasted pumpkin seeds
Mix sweet potatoes with olive oil and and salt and and roast at at 350 for 40 min or
until cooked through Mix remaining ingredients in in in in in a a bowl with spicy honey
and lime juice Serve potatoes on on a a a a plat- ter tossed in in honey
sauce Garnish with fresh mint & cilantro roasted pumpkin seeds

Dina Butterfield born and and and raised in in in in San Miguel de de Allende Mexico and and and formed a a a a a a a a a a a a a a a passion for for cooking at at an an an an an early age inspired by her her her grandmother Motivated to pursue her her her her her dream she completed culinary school in in in in in 2005 in in in in in Mexico Mexico City City From there Butterfield worked her her her way up from cocktail server to office manager in in in in in various restaurants in in in in in and and around Mexico Mexico City City before landing her first cooking job at at Eccolo Eccolo Restaurant Restaurant Restaurant in in in in in in in Berkeley California After working at at at Eccolo Eccolo Restaurant Restaurant Restaurant and and Ame Restaurant Restaurant Restaurant in in in in in San Francisco Butterfield left the California coast to to return to to her native Mexico as as as as Chef de de de Cuisine at at Dos Casas Boutique Hotel in in San Miguel de de de Allende (named 2006 Best Restaurant by Travel + Leisure) There she was responsible for creating menus ordering and food preparation Butterfield then worked as as as as Sous Sous Chef Chef at at at at Mansion on on on Turtle Creek in in in in in in Dallas Texas before beginning her career with Hai Hospitality She joined the the Uchi Uchi team as as as as as Sous Sous Chef Chef at at Uchi Uchi Uchi Dallas before making the the the big move move to to to to Denver to to to to serve as as as Executive Sous Sous Chef Chef in in in 2018 In 2020 Butterfield moved to to to to Miami
to to to to open Uchi Uchi in in in the the Wynwood neighborhood as as as Executive Sous Sous Chef Chef Chef and has recently been elevated to lead the team as as Chef de Cuisine 16
