P. 39

Arlete Eulert’s love of food and cooking is in her genes. Literally. Her paternal grandmother, born in Bolivia, prepared copious meals for special family occasions. As for her maternal grandmother who was born in Italy and into culinary roots that stretch into aniquity, nothing more needs to be said. These remarkable women taught young Arlete, born in Lima, how to use ingredients and how to use her hands in the kitchen. They also inspired and energized a rising star who is on the vanguard of Peruvian gastronomy today.
Matria means “Motherland” — a synthesis of madre (mother) and ierra (land) in Spanish. The name captures Peru’s vast biodiversity, which informs and supports Peruvian cuisine. Most likely, it also celebrates the grandmothers who launched Eulert’s culinary passion and ambiions.
In addiion to running a successful restaurant, Eulert is a member of the Manifesto de Chefs movement, a community of chefs from around the world who are commited to solving the world’s food problems and protecing the planet’s resources. In 2019, the organizaion will establish a center in Lima in partnership with the new school of gastronomy at the Poniical Catholic University of Peru, where Eulert is a professor.
