Tarragon Vinegar
Use this vinegar flavored with tarragon and dried pink peppercorns to whip up unique salad dressings.
Ingredients
• 4 cups (1 L) white wine vinegar
• 3 branches tarragon
• 3 tbsp (45 ml) dried pink peppercorns, lightly crushed

Simply heat vinegar
Steep time
15 days to 1 month
Preparation
• Put tarragon and pink peppercorns into a bottle.
• Pour in hot vinegar.
• Let steep for 15 days or, ideally, 1 month.
Shallot Vinegar
Choose the subtle taste of French shallots for this vinegar, and use in vinaigrettes, sauces, or as a seasoning for oysters.

• 4 cups (1 L) white wine vinegar
Preparation
• Peel and chop shallots.
• Put into a wide neck bottle.
• Pour vinegar into bottle.
• Let steep between 15 days and 1 month. • Filter and store in a perfectly clean bottle.
