 PASTA FAGIOLI (SERVES 8-10 PEOPLE)

8 LINKS HOT SAUSAGE (CASINGS REMOVED) CUPS CHOPPED ONION (1 LARGE ONION)
CUP DICED CARROTS (3 CARROTS)
CUP DICED CELERY (2 STALKS)
CLOVES GARLIC MINCED
CUPS BEEF BROTH
CUPS CHICKEN BROTH
CUPS WATER (TO THIN OUT SAUCE) CAN CRUSHED TOMATOES
SMALL CAN DICED TOMATOES TEASPOONS SUGAR
TEASPOONS DRIED BASIL
TEASPOON DRIED OREGANO
TEASPOON DRIED THYME
TEASPOON DRIED MARJORAM
CUP DRIED PASTA (DITALINI OR TUBBETINI) CAN DRAINED RED KIDNEY BEANS
CAN DRAINED CANNELLINI BEANS PINCH OF SALT AND PEPPER TO TASTE
 ADD SOME OLIVE OIL TO A DEEP POT AND BEGIN TO SAUTE SAUSAGE UNTIL GOLDEN BROWN. REMOVE COOKED SAUSAGE TO A PLATE LEAVING BEHIND THE OILS. ADD ONIONS, CARROTS AND CELERY TO POT AND COOK FOR APPROX 5 MINUTES. ADD GARLIC AND COOK 1 MINUTE LONGER. ADD BOTH BEEF AND CHICKEN BROTH ALONG WITH TOMATO SAUCE, DICED TOMA- TOES, COOKED SAUSAGE AND ALL YOUR SPICES. ADD SALT AND PEPPER TO TASTE. BRING
TO A BOIL, THEN ADD YOUR PASTA. SIMMER FOR APPROX 20 MINUTES, REMOVING FAT THAT FLOATS TO TOP OF SAUCE. AFTER SIMMERING FOR 20 MINUTES, ADD IN YOUR BEANS. AT THIS POINT YOU MIGHT NEED TO ADD ANOTHER CUP OR TWO OF WATER TO GET THE RIGHT THICKNESS OF THE SAUCE. SIMMER FOR ANOTHER 5 MINUTES THEN SERVE IN DEEP BOWLS. TO COMPLETE THE DISH, ADD SOME GRATED CHEESE ON TOP.
