THE SERVICE PROVISION OF THE DUTCH MARITIME PILOTS’ ORGANISATION CONTINUES 24/7. ALSO DURING THE HOLI- DAYS, WHEN MOST PEOPLE ARE OFF. IN THE PILOTAGE REGI- ONS ROTTERDAM-RIJNMOND AND SCHELDEMONDEN, FOR EXAMPLE, THE PILOT VESSELS WILL BE STATIONARY AT THEIR USUAL LOCATIONS OFF THE COAST TO TAKE THE PILOTS TO AND FROM SEAGOING VESSELS. THE CREWS AND VISITING PILOTS STILL GET TO CELEBRATE CHRISTMAS THOUGH. AMIDST THE ONGOING OPERATIONS, A FESTIVE CHRISTMAS MENU IS SERVED ON BOARD.
On board of the Procyon, the pilot vessel stationed off the coast of Rotterdam, this year’s Christmas menu will be prepared by Wesley Kruiswijk. Wesley is the ship’s quartermaster, but has also worked
as a chef in a restaurant in the past. Since the regular chef is off at Christmas, he has offered to cook the Christmas dinner this year. His Christmas menu is a combination of his own inspiration and ideas from cooking magazines. Putting together and preparing four special courses is quite a challenge. “We have sixteen crew members on board and work continuously in two shifts of eight. This means one shift will be enjoying their Christmas menu just past noon on the 25th of December, the other shift will eat in the evening.” Pilots who are waiting to assist a ship or who have just finished piloting a vessel are also welcome to join in the afternoon or evening. In this most unusual year, the festivities will of course take place in a corona-proof setting. “Christmas on board is always fun,” knows Wesley from sixteen years of experience.
On the following pages, you will find all the recipes for the 2020 Christmas menu on board of the Procyon. This way, you can prepare the meal that will be served at sea on the 25th of December at home and enjoy it yourself!
