Carrot Breakfast
Bowl
INGREDIENTS FOR 2 SERVINGS:
200g carrots
Rock salt
100g Skyr
1 apple
Coconut oil for frying
2 tbsp chopped almonds
2 tbsp raisins
2 tbsp honey
150g cooked quinoa
2 tbsp walnut oil
Cinnamon
PREPARATION:
Peel the carrots, chop into small pieces,
and cook in salted water or steam until soft,
then puree. Stir the Skyr until smooth.
Cut the apple (unpeeled) into pieces and
lightly toast in coconut oil in a pan. Add the
almonds, raisins, and honey, and toast for a
few more minutes. Just before serving, add
the quinoa and arrange as shown in the
photo. Finish with walnut oil and sprinkle
with cinnamon.
