CORNED BEEF AND CABBAGE
5 lb corned beef (soaked overnight in water to remove excess salt) 2 2 large large onions
2 2 large large large carrots
4 large large large potatoes (quartered)
(quartered)
1 large large cabbage (quartered)
(quartered)
bay leaf
cold water to cover
ground black pepper
Wash and and and slice Vegetables Cover the the the the the the meat with with water and and and bring to to a a a a a a a a a a a a a boil Skim the the the the the the top Add Add Add vegetables with with the the the the the the the the exception of the the the the the the the the cabbage cabbage Add Add Add the the the the the the the the pepper

and and and and and simmer gently for for 90 minutes minutes Add Add Add the the the the the the the the cabbage cabbage and and and cook for for an an an an additional 30 minutes minutes Serve the the the the the meat surrounded by the the the the the vegetables and and and a a a a a a a a a a a a a a a a a large bowl of Champ Corned beef is not as as popular in Ireland as as most Americans believe It is is is usually a a a a a a regional dish and is is is especially popular in Dublin It is is however one of my favorite dishes all year round Corned Beef & Cabbage
