      Recipe for Perfect Pancakes
Why not have a pancake race in your local park with your friends? Dress up in silly costumes and see who can run the fastest while holding a pancake in a frying pan. Whoever drops their pan or pancake is out of the race.
  You will need:
Large mixing bowl Whisk
Frying pan Palette knife Ladle
Kitchen paper
100 g plain flour
Pinch of salt
2 eggs
300 ml semi-skimmed milk 1 tablespoon of sunflower or vegetable oil plus extra for frying
1 Put the flour and salt into the mixing bowl. Make a small dip in the centre with your fingers, then crack the eggs into it.
2 Pour in about 50 ml milk and all of the oil. Start whisking from the centre.
3 As you whisk, ask someone to help pour in the rest of the milk. Your batter should be as runny as single cream.
4 Grease the inside of the frying pan with oiled kitchen paper.
5 Heat the pan over a medium heat.
6 Pour one ladleful of batter into the
pan. Tilt the pan to move the mixture around, making a thin and even layer.
7 Leave to cook for about 30 seconds. The pancake should turn golden underneath.
8 Hold the pan handle and gently slide a palette knife under the pancake, then quickly lift it and turn it over.
9 Cook the other side for another 30 seconds before turning it on to a warm plate.
10 Continue with the rest of the batter, serving the pancakes as you cook. Serve with lemon juice, sugar and melted butter. Or choose your own favourite topping!
