Purple sprouting broccoli is in the shops and markets at this time of year. It’s not only very tasty, it is packed full of vitamins and iron, so it’s very good for you too. You can eat it boiled or steamed, or you can roast it with olive oil. It is also very good dipped in boiled eggs instead of toast soldiers. Here’s a yummy pasta recipe for you to try.
Recipe for Purple Sprouting Broccoli Pasta You will need:
Tablespoon
Frying pan
2 large saucepans Steamer (optional) Food blender Wooden spoon Colander
Grater
1 garlic clove, chopped or pressed Olive oil
350 g penne or farfalle pasta
400 g purple sprouting broccoli, trimmed
Black pepper
Parmesan cheese, grated
1 Put the garlic and a tablespoon of olive oil into the frying pan.
2 Cook the garlic for a couple of minutes, but do not let it burn,
then remove the pan from the heat.
3 Cook the pasta in boiling water in one of the saucepans, following the directions on the packet.
4 Boil the broccoli in another saucepan for about three minutes or, if you have a steamer, steam it above the pasta for about five minutes until the stems are soft.
5 Take half of the broccoli and blend it until you have a puree. Cut the remaining broccoli into chunks and toss it into the pan. Add a little olive oil and black pepper if you like.
6 Drain the pasta and stir the broccoli puree into it. Serve with lots of grated parmesan. Delicious and healthy!
