Making My Heart Beet

In many cultures over the course of history Beets have been considered an
Ingredients:
1 Tsp chives
1 Tsp Thyme
3 oz of crumbled goat cheese or chèvre
4 large beets or 6 small beets 2 Tbsp Olive Oil
Instructions:
Preheat oven to 400F. Slice beets into 1/4 pieces. Place on baking sheet. Drizzle olive oil over beats. Put in oven for 20-25 minutes until tender. Allow to cool. If you are feeling creative use a heart shaped cookie cutter to cut the beets as seen in the photo. Season with salt and pepper to taste. Top with a spoonful of goat cheese. Sprinkle chives and thyme over the top and serve.
