Citrus & Winter Greens Salad
January is a great time to enjoy citrus or as I like to call summer sunshine stored for Winter. At the farmers’ markets you will find lots of citrus, avocado season starts early to mid January depending on the variety release date, winter greens such as kale and chard are also found in an abundance during this time of year. Santa Rosa Community Farmers’ Market at the Veterans Building will be featuring the Sir Prize Avocados from Country Rhodes Farm which are now for their creamy texture, small pit and long shelf life. Here is a winter salad that will help you shed the pounds put on during the holidays.
Chard Kale Orange Avocado Salad with Lime Dressing:

• 1 medium bunch of dino kale (kale can have tough leaves so use a variety that has softer leaves that will be easy to chew)

• 1 scallion thinly sliced
• 1 lime juiced
• 4 tbsp extra virgin olive oil + more as
Ingredients:
• 1 small bunch cilantro leafy tops only • 2 scallions white and pale green parts
• 1 small bunch of chard
• 4 oranges mixed variety (blood
needed
• 2 tbsp cilantro leaves
• 1 pinch of sea salt
• freshly cracked black pepper to taste
oranges, mandarins and cara cara are
great choices)
• 2 California avocados
Instructions:
1 - Rinse the chard and kale well. Chop into bite size bits.
2 - Using a sharp knife peel the oranges and slice them into thin slices. Arrange
them on a platter.
3 - Cut the avocado crosswise and remove the pit. Cut a thin slice off of the bottom
of each half. Make a slit into the side of each avocado half and gently peel off
the skin. Slice the avocado crosswise into thin slices.
4 - Arrange the avocado slices between the orange slices over the chard and kale
mixture in a bowl.
5 - Transfer the cilantro leafy tops to the bowl of a food processor. Add the lime
juice, olive oil ad scallions and process until smooth. Season to taste with the
sea salt.
6 - Pour the scallion cilantro dressing over the oranges and avocado slices and
serve with a sprinkling of the sliced scallion, freshly cracked black pepper on top and more dressing on the side. Garnish with extra cilantro leaves and enjoy!
