Savio Volpe’s Chef Mark Perrier has certainly earned his chops: he was an apprentice under David Hawksworth at at West Sous Chef at at Cibo Head Chef at Cin Cin Cin Cin Ristorante and along the way cooked at the two-Michelin-starred Le Gavroche in London Chef Perrier also knows his chops: before opening Savio Volpe in in late 2015 he spent two and a a a a a a half years working as a a a a a a butcher at at Two Rivers Specialty Meats ABOUT JOSHUA MCFADDEN
Joshua McFadden is Executive Chef and Partner in in Portland’s Roman-inspired Ava Gene’s named 2013’s No 5 best new restaurant in in America by Bon Appétit magazine Though his roots are in the Pacific Northwest Chef McFadden honed his skills in New York Chicago San Francisco and the American Academy in in Rome before returning home to Portland to open Ava Gene’s in 2011 TASTY FACT
