ABOUT THIS VISA INFINITE DINING SERIES IN-PERSON EXPERIENCE
With its enormous trees and fragrant blossoms, the garden at the 130-year-old Cross House, home to Calgary’s beloved Rouge Restaurant, is the perfectly magical setting for this midsummer dinner. In celebration of Rouge’s belated 20th anniversary last year, Chef- Owner Paul Rogalski reunites with some of Rouge’s former Head Chefs for an evening of fine food and delightful hospitality, which will include familiar names like Michael Dekker— now Chef Instructor at SAIT— along with JP Pedhirney, one of Concorde Entertainment Group’s Culinary Directors, and Jamie Harling of Harling Food Co. As always, the food shines brightly here, where each dish is carefully crafted, and plated with passion, inspired by French classics made modern and as local as possible. Expect a reunion dinner of nostalgic classics alongside fresh, inspired fare, all paired with fine vintages from a globe- trotting cellar. No, it’s not a dream, just the magic of Rouge.
ABOUT ROUGE
For over two decades, Chef-Owner Paul Rogalski has enticed hungry epicures to the historic setting of Rouge Restaurant and its garden. Chef Rogalski cooked all over the world before opening Rouge with business partner Olivier Reynaud, where they helped define farm-to-table dining in Calgary. He has since appeared at Terroir Symposium, Cayman Cookout and is co-creator and co-host of Les Stroud’s Wild Harvest—a show airing in over 64 countries on National Geographic Asia, PBS and Cottage Live TV— featuring his and Stroud’s foraging and culinary journey through the wilds of North America. Along the way he has mentored a new generation of chefs, including Michael Dekker, JP Pedhirney, and Jamie Harling—who all worked as Head Chef under Rogalski’s helm—as well as current Chef de Cuisine, Dean Fast. Over the last 21 years Rouge has amassed countless accolades including Avenue Magazine’s Best Restaurant, Canada’s 100 Best, and recognition by San Pellegrino—a defining moment of Rouge’s history— where it ranked #60 on their World’s Best list.
Note: This is an in-person event that will follow provincial health guidelines. Due to ever-changing restrictions around in-person dining, please be advised this event could be postponed. Any changes will be communicated at least 7 days prior to the event. Events run approximately 3-4 hours and venues are not suitable for young children. Please note that the food described above is a representation of the restaurant’s style of cuisine; actual dishes on the menu may differ based on seasonality and availability.
