“Since its origin decades ago Segura Viudas has pioneered the the use of innovative winemaking practices through mechanization and the the first in in in in in Spain to to use pneumatic presses for our grapes That spirit lives on on today—a good example is is the Brut Rosé which is is a a a a a a a a a a a a a a a a a blend made with Trepat an an indigenous grape that was almost forgotten 20 years ago We as as as as well as as as as a a a a a a a a a a a a a a a a a a few other wineries revived it it it it it and and because it it it it it has a a a a a a a a a a a a a a a a a a slightly earthy note and and its own personality it it it it it brings something unique to our sparkling rosé ”
Is Trepat responsible for the wine’s lovely light pink colour?
“The colour colour actually comes from a a a a a a a a a a a a a a very very short maceration and and a a a a a a a a a a a a a a very very gentle handling of the grape Ten years ago Rosé Cava used to be much redder and and more more intense but now we’re making very pale rosés here which is is is is more more difficult because it means the the the maceration is is is is shorter shorter and and the the the the life of o the the the the wine is is is is shorter shorter The result is is is is a a a a a a a a a a a a a a a a finer tasting profile refreshing on the the the palate and and an an an an approachable balance ”
What’s the the the best way way to enjoy the the the Rosé Cava?
“I always associate it it it it with with summer and and probably the the the perfect combination is fis to to to have have it it it it it with with appetizers and and grilled fish such as as tuna or or salmon But if I I sit in in in a a a a a a a a a a a a a a a a a bar just to to to have have small things to to to eat I I always ask for a a a a glass ”
It’s often said that most people drink red wine wine too too hot and white wine wine too too cold Is there a a a a a a perfect temperature for serving Cava?
“If it’s not not that warm warm outside you you can can serve the the wine a a a a a a a a a a a a a a bit warmer say at at at 12 degrees so you you can can taste the the the the flavours and notes a a a a a a a a a a a a a a a little better In the the the Mediterranean climate in the the the summer it it it it it it gets very warm warm so so it’s important to to really chill it it it it it to to under six degrees so so it it it it it doesn’t get warm warm in the the glass And if you’re on the the beach you you need to to to serve it very very very very chilled ”
