Pasta Salad
Long noodles (do not break to cook) Your choice of vegetables
Italian Salad Dressing (or your choice) Parmesan Cheese
DIRECTIONS: Cook the noodles (do not break for the cooking or eating process) according to directions on box. When done, drain them thoroughly and add your choice of vegetables. Top with dressing and parmesan cheese.
Out With The Old...
Bring good fortune in 2016 with some of the foods that are believed to bring good luck in the new year.
How ‘’bout some fish and grits for breakfast... A light pasta salad for lunch... A pork crown roast for dinner... And a champagne toast with your family and friends as you prepare for... “A Happy New Year!”
Fish - For years, many different cultures ate fish for the new year because it could be easily preserved. The silver skin of the fish is thought to bring good fortune.
Long Noodles - Eating long noodles for the new year is thought to bring a long life in Asian cultures. It's considered bad luck to break the noodle once it's in your mouth, so eat quickly!
Pork - Pork signifies abundance and plenty of food. Pigs also root forward into the ground, which symbol- izes progress.
Black-Eyed Peas - Black-eyed peas look like little coins and are thought to bring good luck those who eat them. Another belief is that as the beans grow when they cook, those who eat them will "grow" with good fortune.
Cooked Greens - Cooked greens, which look like folded dollar bills, are believed to bring money and prosperity for the new year.

Pork Crown Roast With Garlic Herb Rub
1⁄4 cup kosher salt
2 tablespoons coarsely ground black pepper 1/3 cup fresh garlic, peeled and finely diced 1⁄2 cup, plus 2 tablespoons olive oil
1⁄4 cup thyme, leaves removed from stem and
coarsely chopped
1⁄4 cup rosemary, leaves removed from stem
and coarsely chopped
2 tablespoons sage, leaves removed from stem
and coarsely chopped
2 pounds baby red potatoes, halved
1 pound fresh pearl onions, peeled and halved 1 Pork Crown Roast
DIRECTIONS: Thaw roast completely and remove plastic packaging. Heat oven to 350 F. Prepare rub by combining salt, pepper, garlic, herbs and 1/2 cup of olive oil. Mix 2 tablespoons of rub with remaining 2 tablespoons of olive oil and toss with potatoes and onions. Liberally rub all sides of roast with remaining rub, including in between bones. Put any excess rub on top. Place roast on foil lined sheet pan and spread potatoes and onions around sides of roast. Cook on center rack of oven for approximately 2 hours and 20 minutes to 2 hours and 35 minutes for a 9-pound roast, or until internal temperature reaches 145 F in the middle. Let rest for 10-15 minutes before cutting away string and slicing between bones for 16 even portions.
