Ingredients
1 Pound Chicken Tenders
2 Tablespoons Pickle Juice 1/2 Teaspoon Kosher Salt
2 Cups Panko Bread Crumbs 1/3 Cup Oil (Peanut, Avocado,
Vegetable or Coconut)
Directions
Makes 4 Servings
Special Sauce Ingredients
1/2 Cup Mayonnaise
1 Tablespoon BBQ Sauce
1 Teaspoon Yellow Mustard 1 Teaspoon Honey
Directions
In a small mixing bowl combine all the sauce ingredients until well combined.

Panko Chicken Fingers
Marinate chicken tenders in the pickle juice for 2 hours (or up to 24 hours).
2 Preheat a medium size sauté pan or cast iron skillet on medium heat.
3 Place the panko bread crumbs on a plate. Remove the chicken tenders and
dredge them in the panko to coat on both sides. Press down to coat.
4 Add the oil to the pan and carefully place the chicken tenders into the hot oil. Cook for 5 minutes on both sides or until cooked through. The crust should be golden brown. Remove from the pan and place on paper towels to drain excess grease. Sprinkle with kosher salt. Serve with special sauce.
