Lemon Protein Balls
Makes 2 Dozen
1 Tablespoon Lemon Juice
1 Teaspoon Vanilla Bean Paste or Extract
1 Tablespoon Chia Seeds
2 Cups Rolled Oats
Ingredients
1 Cup Cashews
1 Tablespoon Coconut Oil 1/2 Cup Honey
1 Teaspoon Lemon Zest
Directions
1 Place the cashews in a food processor or a blender with coconut oil. Blend until a paste starts to form. Transfer to a medium size mixing bowl.
2 Add the honey, zest and juice of the lemons, vanilla and chia seeds. Stir to com- bine. Add the oats and mix thoroughly.
3 Wet your ngers with water. Grab a golf ball sized amount of the oat mixture and roll in your hands to form a ball. Place in a large ziplock bag. Repeat with the remainder of the mixture until all of your protein balls are formed. Place the bag in the freezer.
4 You can eat these protein balls straight from the freezer or enjoy at room tem- perature.
