    Ingredients
Mint Chocolate Ice Cream Cake
1 Package Chocolate Sandwich Cookies, Crushed
1.5 Quarts Mint Chocolate Chip Ice Cream 1.5 Quarts Chocolate Ice Cream
1/4 Cup Chocolate Syrup
1/2 Cup Mint Candy

Makes 12 Servings
1 Place the oreos in a large ziplock bag and remove the air. With a rolling pin or skil- let, smash the chocolate sandwich cookies to create crumbs.
2 Place half of the smashed cookies on the bottom of a springform pan.
3 Evenly scoop the chocolate ice cream on top of the cookies. Run a spoon
under hot water. Using the spoon, spread the ice cream to create an even layer.
4 Top with half of the chocolate syrup and the remaining cookies.
5 Evenly scoop the mint chocolate chip ice cream on top of the cookies. Run a spoon under hot water. Using the spoon, spread ice cream to create an even layer. Top with chocolate syrup and mint candies.
6 Quickly place the cake into the freezer.
This is a family recipe that originated with coffee ice cream, chocolate ice cream,
macaroon cookies, chocolate sauce and chocolate toffee bits on top. It is what we would have for our birthday and my whole family still loves it. We began morphing the recipe into versions for Thanksgiving, Christmas, Easter and even birthdays.
