LIVESTOCK CARCASS JUDGING
Entry Deadline: June 22, 2020 by 5:00pm
Only for Large Market Animals going through Auction
Will be done on Weigh-In Day: Friday, August 21 starting at 7:00am
1. Will start in Beef Barn and the order will be: Lambs, Market Goats, then Beef.
It will be the Exhibitors responsibly to get your animal to the practice arena where the Carcass Judging will be done.
2. Swine will be done in Swine Barn after Beef is complete.
It will be the Exhibitors responsibly to get your animal to the scale where the Carcass Judging is being done.
Tissue Analysis is done by Ultrasound technology. It identifies fat and muscle tissue and its deposition in relation to the structure of the meat. It identifies tenderness in Livestock.

Mandatory Requirement: In order to participate in a youth livestock program (excluding horse, cavies & dogs) at any California Fair, all exhibitors 9 yrs. and older MUST obtain annual certification in the YQCA program. Those not certified are not eligible to participate at any California Fairs. State Rule II # 12. Certificate is due by August 1, 2020 to the Entry Office or livestock@avfair.com. These events are open to all youth ages 5 to 9 during current calendar year and not entered as an exhibitor in the AV Fair Live- stock Show. Youth need not own the animal. This is a non- exhibit event; animals will remain on the grounds only for the duration of the events unless entered by another exhibitor in the Fair. A signed Release & Waiver of Liability Agreement will be required. Available in the Entry Office 661-948-6060 ext. 226 or 123 or online at avfair.com.
