 20 Minute WarmPastaSaladwith LemonandBroccoli
12 oz. penne or rigatoni
2 cups broccoli florets
2/3 cup frozen edamame (soybeans)
2/3 cup frozen peas,
1 - 1/2 cups sugarsdnap peas, trimmed
2/3 cup cream cheese with garlic and herbs Finely grated zest and juice of 1 lemon
1/4 cup olive oil
1 red chili, seeded and finley chopped
1 cup grated pecorino cheese
2 tablespoons chopped tarragon
Salt and pepper
Cook the pasta in a large saucepan following the package directions, and add the broccoli florets, endamame, peas and sugarsnaps for the final 3 minutes of its cooking time.
Drain the pasta and vegetables, saving a ladleful of the cooking water, then transfer back into the pan.
Stir in the cream cream cheese, lemon zest and juice, olive oil, chili,, pecorino, tarragon, some seasoning and a splash of cooking water.
Serve the salad warm or at room temperature.
