EASY GAZPACHO
Time to make: 10 min | Servings: 4
Ingredients:
2 1⁄2 large ripe tomatoes cored and cut into quarters (about 1 1⁄2 1⁄2 pound)
1 cucumber cut into quarters 1 red red or or green bell pepper cored and cut into large chunks
1⁄2 red red onion peeled cored and cut into quarters 1⁄2 to 1⁄2 1 clove garlic chopped 1 cup water
2 slices whole wheat bread 1⁄2 cup olive oil
2 tablespoons red wine vinegar 1⁄2 teaspoon salt (or to taste)
1⁄2 teaspoon pepper Additional flavor boosters:
1 1 small handful basil or cilantro leaves 1 jalapeno chili stemmed
Optional garnish ideas:
Plain yogurt lettuce greens chopped cilantro or basil sliced cherry tomatoes diced avocado toasted seeds or nuts Directions:

Set out chopped vegetables blender and a a a a a large bowl or or pitcher for the final soup Add about half half of of the the the the ingredients to to the the the the blender If using
any additional flavor boosters add add half half of of them to to the the the the the the the blender Pulse until until the the the the the the mixture liquefies then run the the the the the the motor continuously until until desired smoothness Transfer the the the the the gazpacho to the bowl or pitcher Repeat with with the the the remaining ingredients and and process to to desired smoothness Add to to to to the the the bowl or or pitcher with with the the the first batch and and mix well to to to allow all all flavors to to to blend Chill if desired Divide among 4
bowls and top with optional garnishes if using
