Lemon & Cranberry Traybake
Ingredients
• 6oz Butter
• 6ozs Castor Sugar
• 6ozs Self Raising Flour
•3Eggs
• 2 Lemons
• 2 tablespoons Milk
• 5ozs Dried Cranberries
• 5 tablespoons Granulated Sugar
Method
• Place butter, castor sugar, flour, eggs, zest of both lemons along with milk in a bowl
• Beat until smooth
• Stir in Cranberries
• Spoon the mixture into a baking tray lined
with parchment
• Level the surface then bake in oven at 180˚C
for roughly 30-35 mins or until cake rises and is
firm to touch
• Remove from oven and while still hot squeeze the
lemon juice over and sprinkle granulated sugar
• Leave to cool then cut into bite size squares
Christmas Cake Traybake
Ingredients
• 125 grams Butter
• 125 grams Castor Sugar •3Eggs
• 150 grams Plain Flour
• 500 grams Mixed Dried Fruits • 1 teaspoon Mixed Spice
For the topping:
• 300 grams Marzipan
• 200 grams Icing
• 100 grams Smooth Apricot Jam • Cake decorations of your choice !
Method
• Place butter and sugar in a mixing bowl
• Mix until light and creamy,
• Gradually beat in the eggs then fold in flour, fruit and spice • Bake in a lined dish at 170˚C for approx 45-50 mins
• It should be firm to touch
• Allow to cool completely
• Brush top of cake with warm apricot jam then cover with
rolled out marzipan
• Top with prepared icing sugar and decorate • Cut into finger size and enjoy !!
