Grade 1 Recipe:
Ingredients:
1 C. fresh or frozen corn 1/2 C. chopped onion 1/2 C. sweet green pep-
per, cut into strips 1/2 C. water
1 C. chopped zucchini 1 C. shredded cheddar
cheese
1/2 C. cornmeal
2 eggs
1/2 C. milk
1/4 t. pepper
several dashes hot pep-
per sauce
1 C. chopped tomato 1/2 t. salt
From The Kitchen of:
Zucchini Spoon Bread

In large saucepan combine corn, onion, pepper strips and water. Bring to boil, reduce heat, cover & simmer for 5 minutes. Do not drain. Stir in zucchini, tomatoes, cheese and cornmeal. Set aside.
In small mixing bowl beat eggs slightly, stir in milk, salt, pepper and hot pepper sauce. Stir egg mixture into vegetable mixture in saucepan.
Turn mixture into a greased 1 1/2 quart casserole. Bake uncovered in a 350 degree oven for 40 minutes until set. Let stand 5 minutes.
